Instructions Cream together butter, sugar, vanilla 110 g butter 65 g sugar 1 tsp vanilla Beat in eggs one by one 2 eggs Mix and sift in dry ingredients 110 g plain flour 1.5 tsp baking powder Pinch of salt Refrigerate for at least 1 hr, ideally overnight Fill muffin cases about halfway, then add blueberries. About 8 per muffin. Should be submerged in batter but not pushed to the bottom - they'll sink a bit anyway. About 125 g blueberries (about 8 berries per muffin) Bake at 180 °C (fan) for about 20 min / till golden, test with wooden skewer
