Requires
  • 110 g plain flour
  • 110 g softened butter
  • 65 g caster sugar
  • 2 eggs
  • 1.5 tsp baking powder
  • Approx 125 g blueberries
  • 1 tsp vanilla extract
  • Pinch of salt
Instructions
  1. Cream together butter, sugar, vanilla



  2. Beat in eggs one by one

  3. Mix and sift in dry ingredients



  4. Refrigerate for at least 1 hr, ideally overnight
  5. Fill muffin cases about halfway, then add blueberries. About 8 per muffin. Should be submerged in batter but not pushed to the bottom - they'll sink a bit anyway.

  6. Bake at 180 °C (fan) for about 20 min / till golden, test with wooden skewer
