Requires
  • 185 g salted butter
  • 185 g good-quality cooking chocolate
  • 3 large eggs
  • 275 g caster sugar
  • 85 g plain flour
  • 40 g cocoa powder
  • 100 g choc chips or chunks (various types, if you want) (optional)
Instructions
  1. In the microwave or on a bain-marie, melt together butter and chocolate.


  2. Allow the butter-chocolate mix to cool.
  3. Preheat oven to 160 °C (fan).
  4. Grease and line a 20 cm square tin.
  5. Beat together eggs and sugar till thick and creamy, about double the original volume


  6. Gently fold the chocolate-butter mix into the eggs.
  7. Combine the dry ingredients in another bowl and then sift and gently fold into the liquid mixture. Should be JUST combined - don't overmix


  8. Pour mixture in to the prepared tray and sprinkle chocolate chips or chunks on the top.

  9. Bake for like 25-30 min. The edges should appear set and the centre should only slightly move when the tray is moved.
Notes
  • I had 5 different brownie recipes which I made all in one night to get my family to trial and rank. This was the resounding winner and barely lasted a few days.
  • Choc chips are fully optional. You can fold some in after the dry ingredients are added too but it's very chocolatey even without. Recommend just sprinkling chips over the top after pouring into the tray, if at all.
  • My recipe notes say these are freezeable but i don't think i have ever tested that and i'm not sure why you would
