Requires
- 227 g softened butter
- 1 large egg
- 200 g sugar
- 250 g plain flour
- 1 tsp vanilla extract
- 1/2 tsp salt
- Chunky or raw sugar for dusting
Instructions
- Chill a 9x13″ baking pan in the freezer. Do not grease the pan (lining it with baking paper isn't necessary but might be helpful).
- Blend butter, egg, sugar, vanilla, and salt until creamy.
- Sift in flour and mix in with your hands until it holds together in large clumps. If it seems overly soft, add a bit more flour.
- Press the dough into the chilled pan. Should be even and approx 1/4 inch thick. Dust the top with raw sugar.
- Put in the fridge for 30-60 min or so. Preheat the oven to 180 °C (fan) in this time.
- Bake till golden brown. Approx 12-15 min
- Allow the squares to cool and firm up slightly, then remove from the pan and cool on a rack.
Notes
- don't allow them to fully cool before removing them from the pan.
- if using baking paper, leave some overhang so you can use it as a handle to remove the cakes(?)
