Requires
  • 227 g softened butter
  • 1 large egg
  • 200 g sugar
  • 250 g plain flour
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • Chunky or raw sugar for dusting
Instructions
  1. Chill a 9x13″ baking pan in the freezer. Do not grease the pan (lining it with baking paper isn't necessary but might be helpful).
  2. Blend butter, egg, sugar, vanilla, and salt until creamy.





  3. Sift in flour and mix in with your hands until it holds together in large clumps. If it seems overly soft, add a bit more flour.

  4. Press the dough into the chilled pan. Should be even and approx 1/4 inch thick. Dust the top with raw sugar.

  5. Put in the fridge for 30-60 min or so. Preheat the oven to 180 °C (fan) in this time.
  6. Bake till golden brown. Approx 12-15 min
  7. Allow the squares to cool and firm up slightly, then remove from the pan and cool on a rack.
Notes
  • don't allow them to fully cool before removing them from the pan.
  • if using baking paper, leave some overhang so you can use it as a handle to remove the cakes(?)
