Requires
  • Olive oil
  • 2 cloves garlic minimum, or a couple tsp garlic paste
  • Can of crushed tomatoes or passata
  • Tomato paste (about 1-2 tbsp)
  • Dash of balsamic vinegar
  • Cheeses (multiple if possible)
  • Handful of spinach (fresh or defrosted and drained)
  • Pasta (2 cups)
Instructions
  1. Boil 2 cups pasta.
  2. Fry some garlic in olive oil briefly until golden.


  3. Add tomatoes, balsamic



  4. Add cheeses, spinach; stir in until melted and wilted, respectively


  5. Stir in cooked pasta and eat 👍
Notes
  • Makes enough for like 2 servings.
  • Recommend multiple cheeses. mild and mature cheddar, soft cheese/laughing cow/philly, parmesan, whatever
  • Chopped tomatoes work fine, but passata or a finer blend of tomatoes is nice
  • I make meatballs to go with: richmonds thick pork sausages, remove skins and split each into quarters, roll each piece into a ball, fry n oil (flatten slightly for better cooking)
Variants
  • Optionally, add a handful of onion in and fry till soft before adding the garlic in step 1
  • Adding a big tsp (or more?) of gochujang is good
  • Recs from the original post's notes: use basil instead of spinach; add a cup?? of breadcrumbs before the end
