Little bit of soft cheese (1 x 35g mini tub philly is perfect)
Instructions
Whisk eggs + salt + soft cheese together.
Melt a bit of butter in a pan and cook the eggs without disturbing them until a thin layer of cooked egg appears at the edge, then scramble them and continue cooking until JUST set.
Butter both sides of the bread slices. On one of them, add the cheese and the scrambled eggs; on the other, spread some pesto. Sandwich together and put back into the pan.
Cook till toasted.
Cover with honey to eat. Like really cover
Notes
I don't bother with red pepper flakes but maybe i should. i also add soft cheese to the eggs and don't use chives... but i could see it working well with spring onions in with the eggs
Can use milk, cream, or nothing at all instead of the soft cheese.
