Cheeses (at least one, ideally including parmesan)
Salt + pepper
Cooked pasta (Approx. 1 cup is 1 serving)
Instructions
Cook some pasta
Fry up some minced garlic in butter until golden (does not take long)
Add some Cheeses
Stir in the cooked pasta
Notes
It's quite oily. Suggest adding like a tbsp something acidic (vinegary thing or soy sauce perhaps) plus some cream (sour cream does work well for this).
Or, it turns out that adding a little bit of the pasta water does help a bit. (Had also used tbsp tomato paste and defrosted spinach in this one.)
Fry up some mushrooms in the butter in step 1, THEN add the garlic.
Adding about 1 tbsp of tomato or chilli paste is great.
Variants
Cook pasta; fry a handful of sliced mushrooms (button or chestnut) in butter till browned; add tbsp garlic paste; add cheeses, cooked pasta, take off heat; add 1 tsp gochujang, 2-3 tbsp sour cream. 👍
